Hot Bacon Dressing for Spinach Greens Salad


  • 8 pieces thick-sliced baconchopped, cooked to crisp-set aside
  • Drain grease and in same skillet- sauté:
  • 2 tablespoons minced shallots
  • 3 tablespoons apple cider vinegar
  • 1/4 c EVOO
  • 1 1/2 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • Kosher salt and freshly ground black pepper

Whisk and enjoy warm over spinach and salad of choice!
