- 8 pieces thick-sliced bacon, chopped, cooked to crisp-set aside
- Drain grease and in same skillet- sauté:
- 2 tablespoons minced shallots
- 3 tablespoons apple cider vinegar
- 1/4 c EVOO
- 1 1/2 teaspoon honey
- 1/2 teaspoon Dijon mustard
- Kosher salt and freshly ground black pepper
Whisk and enjoy warm over spinach and salad of choice!
